Palmiers

Light, airy and covered in carmelized sugar, these beautiful little cookies taste as good as they look.  Can be served as something fancy but they are so easy to make that you can have them every week.

1 sheet puff pastry

1/2 cup cane sugar

The above list is surprisingly short and yes, you could make the puff pastry from scratch.  But I never do.  Puff pastry can be tricky and the store bought pastry yields perfect results.  Let one sheet come to an almost complete thaw.  Spread half of the sugar generously on a large, clean surface.  Place the puff pastry on top of the sugar.  Spread the other half on top of the pastry.  With a rolling pin, press and roll the sugar into the pastry.

Cut the sugared pastry into thirds length wise.  Then, for each third, cut horizontally into 1/4″ strips.  Roll each strip end inward, forming a curl that reaches the center.  Lay on its side and place on a cookie sheet.  When the sheet is full, place in a 375 degree oven for 8 minutes.
