Banana Tea Bread

Meme made the best banana bread.  That’s saying something considering I don’t like bananas!  Here, I’ve turned her recipe that was heavy with egg and oil into a vegan version simply by replacing both of those wet ingredients with a little over a cup of cooled brew black tea.

2 very ripe bananas

1 cup + of cooled, brewed black tea

3/4 cup of sugar plus 1 heaping tablespoon

2 + cups of flour

1/4 tsp baking soda

1/4 tsp baking powder

cinnamon to taste

chopped walnuts (optional)

Preheat your oven to 350 degrees F.  Grease 1 medium bread loaf pan.  In a mixing bowl, combine mashed banans and tea.  Let steep for 1 hour.  Then, combine the rest of the ingredients (except for the additional Tbs of sugar.).  If the mixture is too wet, add more flour.  Pour the mixture into the loaf pan.  Sprinkle the top of the batter with remaining sugar.  Bake 45 minutes to 1 hour.  Bread is done with a knife comes clean from the center.
