Ok. Ok. A tartine is a fancy shmancy name for an open face sandwich with spreadable toppings. But hey, someone had to name this freakishly delicious invention. The possibilities are endless but cucumber and avocado has to be one of my favorites.
1 ripe avocado
1/2 English cucumber, peeled and sliced thinly
baguette
1 Tbs olive oil
fresh cracked pepper
Mediterranean garlic spread (optional)
almond slices
Slice two pieces from a baguette on an angle and brush with olive oil. Grill or place under the broiler until crunchy. Remove and set aside.
Pit and mash one avocado in a bowl. Add fresh black pepper and a pinch of sea salt. For a bolder flavor, add 1 tsp of garlic spread and mix with mashed avocado. Now assemble. Place the baguette slices on plate. Spread avocado mixture generously on the top of each. Top with cucumber slices, cracked pepper and finally, sliced almonds. Two large slices accompanied by a salad will equal a light dinner or cut in half and share for a snack.
