Avocado Salad

The avocado is a controversial vegetable when it comes to good health.  Some sing its praises for “good fat” others say its high calories far outshine its health benefits.  In my family, the women have enjoyed avocados for their benefits when it comes to our hair and nails.  The avocado also is a lovely, little “amuse bushe” when hosting a dinner party and served as the simplest salad in the world.  Seriously, if you can cut an avocado in half, you can make this and I promise, it will impress.

The great thing about avocados is that they are often sold in netted bags.  Hence, they are affordable for your next dinner party or better yet, make it as a dish to pass!  Personally, I love to eat avocados this way for breakfast.  It’s delicious and I have the rest of the day to burn off the calories.  Either way, enjoying avocados like this is fast and delicious and artful.

Avocado Salad

1 avocado, sliced long ways in half, pit removed

2 Tbs balsamic vinegar

salt and pepper to taste

In each bowl, place halved and pitted avocado.  In each half there will be a divot (where the pit used to be).  Pour  1 Tbs of balsamic vinegar.  Sprinkle with salt and pepper.  Serve immediately.  Serves 2.
